Haricot Bean Cassoulet


  • 4 slices of smoked bacon
  • 1 red onion
  • 3 garlic cloves
  • 1 sprig of rosemary
  • 1 bay leaf
  • 6 sprigs of thyme
  • 1 can of haricot beans/any white beans
  • A dash of white wine
  • 100ml stock (i prefer chicken stock)
  • A knob of butter
  • Flat parsley
  • Salt and pepper
  • Directions:

    1) Roughly chop the bacon.

    2) Add a small amount of oil to a medium sized pan and cook the bacon for a few minutes.

    3) Add the diced onion and garlic and cook until the onion is soft.

    4) Add the other ingredients (except for the butter) and cook for 15 minutes.

    5) Stir in the butter at the end
    This goes very nicely with sausages and dijon mustard or roast chicken with steamed green vegetables.
